I’ve been thinking about making this recipe for a long time, so now that peaches are plentiful here in Georgia, and I have more basil growing in the garden than I can possibly use before it flowers, today was the day.
Slice a peach into 8 wedges.
Season with fresh ground black pepper.
Add one basil leaf to each peach wedge.
Wrap in bacon.
Cook on medium low heat.
Turn as needed until the bacon is crispy.
Plate and drizzle with balsamic vinegar.
This can be served as an appetizer, a side dish, on top of leafy greens, and I am sure they would be fantastic cooked on the grill.
They are absolutely as good as they look, but best served warm. For the record, I wouldn’t let a cold one go to waste!
Peaches, bacon, black pepper, basil and balsamic vinegar, foods I would have never thought to combine, but the flavors blend perfectly.
